Peanutbutter Chickpea Curry

Ingredients for 4

  • 1 onion (finely chopped)
  • 2 tbsp vegetable oil
  • 2 cloves garlic (minced)
  • 1 tsp fresh ginger (minced)
  • 1 tsp turmeric (ground)
  • ½ tsp cumin (ground )
  •  1 pinch cinnamon
  • 1 large carrot (sliced)
  • 6 okras (cut into pieces)
  • 1 spring onion (chopped)
  • 1,5 green chili (chopped)
  • 1 can chickpeas
  • 400 g coconut milk
  • 150 ml water
  • 2-3 tbsp crunchy peanut butter
  • Coriander
  • Salt to taste

Method

  1. Fry the onions in oil on medium low heat for 5 minutes until gold brown.
  2. Add garlic, ginger, chili, turmeric, ground coriander seeds, cinnamon, cumin and fry for 1 minute.
  3. Add the coconut milk with peanut butter, chickpeas, carrots and okras and cook for 5 minutes.
  4. Season with salt.
  5. Serve with chopped coriander and rice.
